A study out of the University of Illinois looks at meat consumption in the U.S.

U of I College of Agriculture research assistant Gretchen Kuck says for the most part, the amount of meat people are eating has remained steady over the past two decades.

"You do see a dip from 2007 to 2013. That dip, especially in beef, coincides with the Great Recession in 2008, where we saw a reduction in disposable income in the United States. So, overall you're seeing a fairly stable total amount of meat consumption. But, a shift between those two proteins, (with) beef being the more expensive of the two proteins towards a shift to the less expensive chicken protein."

Corn prices also rose during that period as more was used for ethanol production.
